Happy Tuesday!! Today’s post is a quick and easy breakfast (or snack) bar. It’s a strawberry oatmeal bar, and boy is it good! I first found this recipe during our Vegan for May challenge. It was probably one of my favorite recipes from that challenge! The first time I made it I used more sugar, and it was a bit too sweet for my taste. I cut it down this time, and it was perfect!! Let’s get straight to it!

Vegan Strawberry Oat Bars

10-15 minutes

30-40 minutes

45 minutes

Ingredients

1 cup all-purpose flour

1 cup rolled oats (not instant)

½ cup brown sugar (more or less to taste.. Most recipes call for 1 cup, but I didn’t want it to be thattt sweet)

1 ¾ sticks vegan butter

1 tsp baking soda

Strawberry jam

Dash of salt

Dash of cinnamon

Walnuts (optional)

Instructions

  1. Preheat oven to 350F. Grease a pan with vegan butter. I used an 8×8 pan, but I’d like the bars to be thinner in the future, so I’ll probably use 13×9.
  2. In a medium-sized bowl, combine flour, oats, sugar, baking soda, salt, cinnamon, and nuts. Mix until well combined.
  3. Cut the butter into small chunks. Add them to the dry mixture. Mix the ingredients well. You can use a pastry blender if you have one or CLEAN hands if you don’t. The mixture will be somewhat crumbly. That’s ok. Taste your mixture at this point and add more sugar, cinnamon, salt to taste if you think it needs it. (The GREAT thing about this being a vegan recipe is that there are no eggs, so you can eat the dough worry-free!… I mean I  eat cookie dough but.. This is safe… So yay lol)
  4. Spread half of the mixture out in the bottom of your pan. Gently press to create an even layer. Layer strawberry jam on top of the oat mixture. Use a lot or a little depending on what you like (more jam=sweeter, juicier bars; less jam=drier bars). Layer the remainder of the oat mixture on top.
  5. Bake at 350F for 30-40 minutes, or until it looks like golden deliciousness! Enjoy!
