I love eating a good batch of corn in the summer. So to continue with our vegan recipes I decided to make a vegan version of corn chowder. This recipe is sweet so if you’re not a fan of sweet corn feel free to remove the honey and brown sugar to make a more hearty chowder.

My original plan was to make potato and broccoli soup but since it’s actually starting to heat up in Indy I wanted to make something a little more light. At many grocery stores corn on the cob is on sale so I figured why not take advantage of this opportunity. I was able to get 6 pieces of corn for $1 at Fresh Thyme, which is quite the steal! I already had many of the other ingredients at home so I only spent a total of $3 for this yummy corn chowder.

Corn Chowder

30 Minutes

40 Minutes

Ingredients

9 red potatoes

6 corn kernels

½ Yellow Onion

Brown Sugar to taste

Honey to taste

Vegetable Broth

5-6 Gardein Meatballs

Orange Bell Pepper

Instructions

  1. Cook and season the gardein meatballs in olive oil and water until soft. Smash meatballs to make ground meat.

  2. Add chopped onions and cook until translucent.

  3. While onions are cooking cut corn off the cob.

  4. Put onions, meat, chopped potatoes, corn, brown sugar and honey in a large pot with vegetable broth. Add any additional seasonings you like.

  5. Allow to cook until potatoes get soft. Once soft add chopped bell pepper.

  6. Continue to cook until peppers soften.
