I love eating a good batch of corn in the summer. So to continue with our vegan recipes I decided to make a vegan version of corn chowder. This recipe is sweet so if you’re not a fan of sweet corn feel free to remove the honey and brown sugar to make a more hearty chowder.
My original plan was to make potato and broccoli soup but since it’s actually starting to heat up in Indy I wanted to make something a little more light. At many grocery stores corn on the cob is on sale so I figured why not take advantage of this opportunity. I was able to get 6 pieces of corn for $1 at Fresh Thyme, which is quite the steal! I already had many of the other ingredients at home so I only spent a total of $3 for this yummy corn chowder.
Indy Hip Chic is a lifestyle blog following the amazingly awesome lives of 4 Indy natives. Originally created to be a creative outlet and place to try new things we thought why not share this experience??? And with that Indy Hip Chic was born. From cosplay to vegan recipes we cover a little bit of everything while showing off the place we call home.
