Low Carb Vegan Seitan Salad

Ingredients

Traditional Seitan (I used Sweet Earth)

Zucchini Noodles (I used Green Giant Veggie Spirals)

1 tbsp Olive Oil

        2 tbsp Mustard

1 tbsp Vinegar

1 Avocado (cubed)

Garlic Pepper Seasoning

Instructions

  1. Heat skillet with oil on medium and saute the seitan until it is golden brown, season the seitan
  2. Microwave veggie spirals for 6-7 minutes
  3. In a bowl mix the ingredients for the dressing 
  4. Place the veggie spirals in a bowl and mix with the dressing. 
  5. Place the seitan and avocado on top then enjoy!
