If you’re like me sour cream is a MUST on tacos, nachos, burritos, taco salads, baked potatoes and a wide range of other sour cream approved entrees. So not being able to indulge in sour cream has been one of the hardest parts of transitioning to a vegan diet. I’ve been able to find vegan cream cheese, shredded cheese, and yogurt alternative but sour cream seems to be the one thing I am unable to find. After a few failed grocery store runs I finally decided to try to make it myself. After a quick Pinterest search, I was able to find this sour cream alternative.

Now I’m not going to lie to you and tell you this alternative tastes just like sour cream because it does not but it does add a nice taste to Mexican style dishes. It has a nutty cashew taste with a hint of bitter sourness that you get with normal sour cream. I have yet to try it on potatoes, and I’m not sure I will, but it was a success on my Vegan Taco Bowl.

Vegan Taco Bowl

Ingredients

1 1/2 cups of cashews (whole or pieces)

3/4 cups of water

2 tablespoons of apple cider vinegar

1 tablespoon of lemon juice

salt to taste (optional)

Instructions

  1. Bring a few cups of water to a boil. Put 1 1/2 cups of cashews in a tall measuring cup. Pour boiling water on top ensuring all cashews are covered. Allow to soak for 10 minutes.

  2. Drain cashews and add to a high powered blender or food processor. Add remaining ingredients and blend until smooth.

  3. Transfer to small container and chill in refrigerator. Sour cream will last up to a week.
