Avocados are very popular and for good reasons. It is an absolutely delicious guilt-free fat that can be used in so many different ways. I love guacamole, avocado toast, and guac with my favorite chili is always a pleasure. I came across this recipe as I was looking for low car vegan meals and it is definitely unique!

Avocado Salad Bowls

Ingredients

Dressing:

1/4 cup extra virgin olive oil

1/4 cup lemon juice

1 tbsp poppy seeds

1 tsp grated ginger (I used powdered)

1/4 tsp salt

For the Bowls:

1 medium avocado

1 small carrot, shredded 1/4 cup

2 tsp of tahini

 

Instructions

  1. Put dressing ingredients into a tightly sealed jar and shake aggressively
  2. In a separate dish, combine 2 tbsp of the dressing with the grated carrot
  3. Cut the avocado in half and remove the pit
  4. Spoon the dressed carrots into the avocado halves
  5. Drizzle tahini over the avocado and carrots
