It’s Day 9!! Today’s post is a recipe for those days when cooking just isn’t in the stars… You don’t have the time or energy or will to do a bunch of chopping and wait hours for some beans to cook?? This is the perfect quick meal for you!! I called it “Frick’n” good because of the “fake chicken” lol get it? haha I got a good laugh out of that.  Anyyyywho lol hit me in the comments and let me know your favorite vegan meal!!

Frick'n Good Sandwiches

8-20 minutes

Ingredients

 

  • Gardein Crispy Tenders
  • Fresh spinach
  • Tomato (I used roma tomatoes)
  • Cucumber
  • Vegan Mayonnaise
  • Vegan Gourmet Mozzarella Shreds
  • Sriracha
  • Wheat Pita Pocket (or whatever bread you like)

 

Instructions

 

  1. Preheat oven to 430F.
  2. Bake for 18-20 minutes at 430F (or 8 minutes at 450F if you’re in a rush!), turning halfway.
  3. While tenders are cooking, wash and prep all produce. Slice tomatoes and cucumbers.
  4. When the tenders finish baking, turn off the oven. Sprinkle tenders with vegan gourmet mozzarella shreds. Return to oven for a few minutes, until shreds turn into melty goodness!
  5. Assemble sandwich with mayo, spinach, cucumbers and tomatoes.
  6. Remove tenders from oven and drizzle with sriracha.
  7. Add tenders to sandwich.
  8. Pair with a side of your choosing and enjoy! I had Traditional Chex Mix with mine! (Be sure to get the TRADITIONAL flavor! Other flavors have some non-vegan friendly ingredients!!)
