I came across this recipe when I was looking for something more light but yummy to eat for lunch or just as a snack after work. This recipe is quick, easy, and doesn’t cost a lot. It will last a few days and I think it was the perfect little salad for summer! You can eat it with crackers and add any other things you may like such as nuts, but I actually enjoy this salad on its own. I did add a little more mustard and curry for taste as needed while I ate it. Let me know what you think!
