Hi guys!! Today’s recipe is an easy and almost eerily realistic recipe I found on Rachel Ama’s YouTube channel!! (See our black vegan blog-spiration post for other great resources.) Some vegan meals can be pretty time consuming, but I don’t always have that type of time. I’m assuming you don’t either, so I’m all about finding fast and simple meals and snacks to share this month!! Today I’ll be making “Chuna” as Rachel calls it, which is essentially the vegan version of tuna (made with chickpeas). It makes for a great meal or snack! I really think you’ll enjoy it!

Chuna Salad

Ingredients

 

  • 1 can Garbanzo beans (no salt added)
  • Diced red onions to taste (2-4 tbsp)
  • Soy sauce to taste
  • ⅓ to ½ Nori sheet
  • Vegan mayonnaise to taste (½ cup)
  • Salt and pepper to taste
  • Juice from ½ lemon
  • Paprika

Instructions

 

  1. Drain and rinse garbanzo beans (chickpeas). I like to remove the skin from them as well, but that’s a personal preference. Just squeeze them and they pop right out of the skin.
  2. Using a potato masher, mash garbanzo beans until you get the desired consistency. I didn’t want it to be totally smooth, so I left it slightly chunky to resemble the texture of tuna.
  3. Add diced onions and stir.
  4. Add soy sauce to taste. I used about 1-2 tbsp. I probably could have used a little less.
  5. Cut up a nori sheet and bits to the mixture. I used scissors to cut up about ⅓ to ½ of a nori sheet. This will give you the “fishy” taste, so use more or less depending on how fishy you want it to taste.
  6. Squeeze ½ of a small lemon into mixture.
  7. Add vegan mayonnaise until you get the desired consistency.
  8. Add salt and pepper to taste. You probably don’t need much salt because of the soy sauce and nori. Taste it before you add any!!
  9. Sprinkle some paprika over the top of your finished Chuna to “make it pretty,” as my mother would say! Lol

That’s it for this yummy Chuna salad!! I was actually pretty shocked just how much this tasted like tuna lol. I will say it doesn’t taste exactly like the tuna salad that I would normally make. Mostly because I’d use Miracle Whip instead of mayonnaise, so I’m used to it tasting a little sweeter. If you like the taste of tuna itself and/or tuna melts, I think you’ll be pleasantly surprised!!

 

You can enjoy this with some crackers or get crazy and make a tuna melt! I toasted some bread, added a some Follow Your Heart cheddar style vegan shreds and baked at 350 F for about 10 minutes or so. The cheese gets soft but doesn’t really look “melted” like real cheese would. It works though! Vegan life is looking up!
