Caramel Apple Cookies!

Every year without fail, the fall weather inspires me to try new recipes and explore my baking abilities. I have never made a pie at all before so in my mind this was the best of both worlds. I also am one of those people who only eat pie during the cooler months because I just never really consider it an option. This recipe was actually fun and easy to make and I think that the cookies turned out to be really cute.

Caramel Apple Pie Cookies!

Prep Time – 35 min. | Cook Time – 20-25 min. | Total Time – 55 min.

Ingredients

1 package refrigerated pie crust

5 oz caramel ice cream topping

10 oz can apple pie filling

1/2 tsp cinnamon

1/4 tsp nutmeg

2 tbsp sugar

Instructions

  1. WARM UP pie crust on the counter for 20 minutes or until easy to manipulate
  2. DUST your work area with flour and roll out crusts
  3. SPREAD caramel ice cream topping over one of the rolled out crusts
  4. SPREAD apple pie filling over the top of the caramel. If apple bits are too big, pulse the filling with a blender once or twice
  5. CUT the other rolled out pie crust into 1/2″ wide strips
  6. Arrange the strips in a lattice pattern on top of the pie filling
  7. Using a cookie or biscuit cutter, CUT OUT individual circles fromĀ  your covered pie crust
  8. TRANSFER the cookies to a cookie sheet that has been sprayed with non stick spray
  9. In a small bowl BEAT an egg until well blended, then BRUSH the tops of the cookies with the beaten egg
  10. In another bowl STIR TOGETHER cinnamon, nutmeg, and sugar and SPRINKLE the tops of your cookies with the spiced sugar mixture
  11. BAKE at 350 degrees for 20-25 minutes or until golden brown
